This recipe dates back to when I studied for my mid-term exams in university. I wanted to make something fast. I also wanted it not to be completely junk but equally delicious to junk. Making a pizza from scratch wasn’t an option since it would take me over an hour and I didn’t have a whole hour just to make pizza. However, my mother stored prebaked pizza crusts in the freezer for emergency situations or when she wanted to cook something really quick. That was it. I instantly fell in love with the idea!

I do the same thing to this day. I pick a time when I feel like cooking and I make 3-4 "pizza bases" which I store in the freezer. So, whenever I don’t have time or want to eat something quick but tasty, I grab a pizza crust from the freezer, put whatever I find in the fridge on top and in the oven it goes. 15 minutes later, I am eating pizza. That’s why I am so happy to share this recipe with you. It’s simple, fast and homemade. Are you getting hungry? Let’s get to the recipe right away.

Whole Wheat Homemade Pizza Crust

makes 3-4 pizza bases

For the pizza crust

350 gr whole wheat flour

150 gr all-purpose flour

300 ml lukewarm water (10 oz)

9 gr dry instant yeast

4 tablespoons vegetable oil (preferably olive oil)

1 teaspoon salt

1 teaspoon sugar

Instructions

1. Preheat the oven in 200ºC (395ºF).

2. In a small bowl, mix the water with the yeast and the sugar and let it rest for 5-10 minutes.

3. In another bowl, combine the rest of the ingredients together and add the water-yeast mixture. Knead until a dough has been formed. Cover with a cotton kitchen towel and let it rise somewhere warm for 20 minutes.

4. Divide the dough into 3-4 pieces, cover them with the towel and let them rise for another 10 minutes maximum. Form 3-4 pizza bases in the shape of a circle. Prick each dough with a fork and bake at 200ºC (395ºF) for 5 minutes.

5. Let them cool down. Cover with cling film and store in the freezer.

Note: they can last in the freezer for up to 3 months. They don’t need defrosting before using. Just add any ingredients on top and bake in a preheated oven (200ºC / 395ºF) for 10 minutes or until the crust has got a golden-brown color.
