I am back this week with a recipe (FINALLY!!!). A huge shout out to my sister Artemis since this is her recipe and once again she was very kind to share it with me and now I can share it with you people! If you haven’t checked her other recipe in my blog, go check it out now (Anise bread with brown sesame seeds). The girl can bake and is very experienced in dough making.
So this week’s theme…. lavender! Don’t be afraid by the sound of it. These scones are perfect for coffee, tea, as a snack and can be eaten in either a sweet or salty way. The recipe is fairly easy and quick. Make sure to double the recipe because 6 scones are never enough… take my advice!!!
Let’s dive right into it!
Lavender scones
makes 6 small scones
120 gr all-purpose flour
1/2 tablespoon baking powder
2 tablespoons unsalted butter
25 gr brown sugar
1 teaspoon fresh lavender, plus extra to sprinkle on top
80 ml milk
1.Preheat oven to 210·C (425·F).
2.Combine the flour and the baking powder together and sift them in a large bowl. Chop the butter in pieces and add it in the bowl. Mix it with the flour until you get the consistency of fine bread crumbs. You should rub the mixture between your hands until all fat and greasiness have been absorbed.
3.Combine the sugar and lavender in another bowl gently rubbing them between your hands. Add them into the bowl of the flour-butter mixture. Finally, add the milk and mix them all together. The dough must be soft and a bit sticky.
4.Sprinkle the dough with some extra flour and cut it into rounds, 2cm (1 inch) thick.
5.Place the scones in small cupcake cases which are previously sprayed in order not to stick. Brush them with a bit of milk and sprinkle some lavender on top.
6.Bake them for about 10-15 minutes until they turn golden brown. Let them cool down and remove them from their cases.
Note: Lavender scones are neither too sweet nor salty. You can easily have them with apricot jam or cheese for a salty twist. Another way is to refrigerate them, cut them in half and apply clotted cream in the middle.
