Pumpkin nutmeg pancakes: the perfect snack!

It's been quite a while since I posted a recipe. While I was looking through my own cookbook to find a pumpkin recipe, I thought... why not make one from scratch? I have a toddler who is constantly asking for something to eat. So, I have been very much into pancakes and cupcakes for the past year. That's why I decided to go with pumpkin pancakes for this year. And I have to say, they turned out pretty pretty good. At least my toddler approves and that's a big YES! Plus, my husband ate them very pleasantly although he is not a fan of the pumpkin.

This recipe is a recipe that is easy to make. The pumpkin flavor may be sublte to some. If so, add an extra 1/3 cup of pumpkin pulp to the mixture. For me, you can't have pumpkin pancakes without cinnamon and nutmeg. However, feel free to alter the recipe to your own taste. They go really well with honey and blueberries on top. Enjoy!

Pumpkin nutmeg pancakes

makes 12-13 pancakes


Ingredients

1 ½ cups almond milk

1 cup pumpkin pulp

2 large eggs lightly beaten

2 tablespoons olive oil

2 cups all-purpose flour

4 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 tablespoon ground cinnamon

½ tablespoon salt

½ teaspoon nutmeg

Instructions

1. In a large bowl, mix the pumpkin pulp, the milk, the eggs and the oil until very well combined.

2. In a medium bowl, combine the flour, the sugar, the baking powder, the baking soda, the cinnamon, the nutmeg and the salt.

3. Add the dry-ingredient mixture to the pumpkin mixture. Mix until you have a nice thick batter.

4. Add ½ teaspoon olive oil in a pan. Spread it and heat the pan over medium to high heat.

5. Pour 3 tablespoons of batter for each pancake onto the pan, slightly flattening the top with a spoon.

6. Bring the heat to a medium and cook for about 2 ½ minutes on the one side. When bubbles appear on the surface, flip and cook the other side for an additional minute.

7. Enjoy the pancakes hot and fluffy.
