Ladies and gentlemen I am back this week with a very sweet post. Chocolate brownies!!! But not just any chocolate brownies; the chocolate brownies I make for my daughter's nameday every year. So, this started last year, when we celebrated Yvonne's first nameday. Then, I decided to make it a tradition.
These are not your regular brownies. They are slighlty healthier than the original ones (if you can say that...) but the taste is really rich and chocolatey! I wanted to use honey instead of sugar and oat flour instead of all-purpose flour. Plus, I added clementine juice, since clementines are my daughter's favorite winter fruit. If you are wondering how to make oat flour, don't worry! Just put the oat flakes in the blender and blend until you get a flour-like consistency.
You can go ahead and add red fruit in the brownie mixture as well. Or, you can skip the clementine juice altogether if you are not a fan. What's more, you can add some pecans or walnuts (whatever you like) to give your brownies a nutty flavor. Experiment and find what suits your taste.

Chocolate clementine oatmeal brownies
makes 22-24 brownies
Ingredients
360 gr.
butter
500 gr. dark
chocolate
400 gr. honey
8 eggs
300 gr. oat
flour
80 gr. cocoa powder
2 teaspoons
vanilla extract
juice from
8 clementines
Instructions
1. Preheat the oven to 375·F (180∘C).
2. In a large bowl, combine the chocolate cut into small pieces and the butter. Put them over a hot water bath (bain-marie). Stir until you get a smooth mixture.
3. Take the mixture off the heat and pour the honey in the bowl. Continue stirring and leave it to the side to cool down a little bit.
4. Separate the eggs into yolks and egg whites. Add the egg yolks to the mixture one by one. Also, add the vanilla extract and the clementine juice. Stir until well combined.
5. Sift the cocoa and the oat flour and add them to the mixture too.
6. In a separate bowl, beat the egg whites until you get a meringue-like consistency. Gently whisk the meringue into the mixture. Go slow until you get a smooth mixture.
7. Cover the bottom of a large baking tray (30x40cm) with parchment paper. Pour the mixture in the tray and bake for 45-50 minutes.
8. After the brownie cake is out of the oven, let it cool down for at least half an hour before cutting it. Divide the cake into pieces and enjoy.
